Strange taste chicken | 怪味鸡

1 inch piece of ginger

1/2 a yellow onion

3 chicken quarters

Pinch of salt

2 green onions

Sauce:

  • 1 teaspoon Sichuan peppercorns
  • 2 green onions
  • 2 tablespoons sesame paste or creamy peanut butter
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame oil
  • 1 tablespoon sugar
  • 2 tablespoons Chinese black vinegar
  • 1 tablespoon canola oil

Roughly slice the ginger and chop onion into a few sections. Place in a dutch oven with chicken. Submerge with water and add a pinch of salt. Bring to a boil over high heat and reduce to a simmer for about 45 minutes or until cooked through.

While the chicken is cooking, work on the sauce. Start by grinding up the Sichuan peppercorns until fine. Thinly slice two green onions. Spoon the sesame paste or peanut butter into a small bowl. Add about a teaspoon of water and mix until smooth. Add the rest of the sauce ingredients and mix until fully integrated. 

Remove chicken from the pot and place on a plate. Put this in the fridge until it has cooled down. Take it out and cut, arranging on a plate as you wish. Chop up the two remaining green onions and sprinkle on top of the chicken. Drizzle with sauce when ready to serve.
