Pressure Cooker Pork Ribs | 高压锅排骨

1 pound pork riblets or spare ribs

1/2 pound green beans

2 carrots

3 small potatoes

2 green onions

1 piece of ginger

2 cups chicken broth

1 teaspoon Sichuan peppercorns

2 star anise

1 teaspoon whole cumin seeds

1/2 cup soy sauce

1/3 cup cooking wine

2 teaspoons salt

1/4 teaspoon white pepper

Place ribs in pot and fill with water until fully submerged. Let water come to a boil over high heat. While water is boiling, chop all vegetables into bite-sized chunks. Get the pressure cooker ready by adding chicken stock, peppercorns, star anise, cumin seeds, and bringing to a boil.

Remove ribs from pot and place in pressure cooker with vegetables and all remaining ingredients. Stir to combine. Add some water if ribs are not fully immersed.

Secure lid and cook for 30 minutes over medium heat. Remove from heat and let sit for 15 minutes before opening. Serve with rice.
